Tzatiziki (Greek Cucumber Sauce)

This sauce is most often used with gyros.  Try it as a dressing for wraps or pita sandwiches (it's great on chicken wraps).  It can also be used as a dip for veggies or chips.
16 oz plain yogurtTzatziki
1/2 cucumber peeled and seeded
1 clove garlic, minced
1 tbsp red wine vinegar or balsamic vinegar
1 tbsp olive oil
1/4 tsp black pepper
1/2 tsp salt
Optional: Dill or Mint
Grate the cucumber, put in a sieve or colander, sprinkle generously with salt. Let stand for 15-30 minutes (this step is not essential but it makes the sauce thicker). Squeeze out moisture that the salt has drawn out of the cucumber and add cucumber to the yogurt along with the rest of the ingredients. Refrigerate for at least an hour (preferably overnight) so flavors can permeate the yogurt.
Hanging the yogurt in cheesecloth for a few hour to remove excess liquid results in a thicker sauce. (This step is not essential)
