Some Good Zucchini Bread

3 eggs
1 cup apple saucezucchini bread
1 cup brown sugar
1 cup white sugar
2 tsp vanilla
1 tsp maple extract
1 tsp salt
1 tsp cinnamon
1/4 tsp baking soda
3 cups flour
2 cups grated zucchini
Cream eggs and applesauce together.  Add vanilla, maple extract and dry ingredients, mix 1 minute until blended.  Mix in zucchini and stir 1 minute more.  Bake at 325 degrees for 1 hour and 10 minutes in 2 greased bread pans.  *Just out of the oven, spread butter on top of the loaves for a chewier crust.*

Whole Wheat Zucchini Bread

3 eggs
1 cup oil
1 tbsp vanilla
3 cups whole wheat flour
1 tsp baking soda
1 tsp cinnamon
2 cups sugar
2 cups grated zucchini
1 tsp salt
1/2 tsp baking powder
1 cup chopped nuts
Beat eggs until they are light and fluffy.  Add sugar gradually, mixing well.  Add oil and vanilla to mixture.  Stir in zucchini.  Sift dry ingredients together.  Add to mixture.  Add nuts.  Pour in 3 well greased bread pans.  Bake at 325 degrees for 1 hour.
